Shredded zucchini provides moisture and texture to these muffins. A perfect quick breakfast or snack.
Preheat oven to 350 degrees F.
Whisk einkorn flour, cinnamon, baking soda and salt in a large bowl. Whisk eggs, jaggery, ghee (or butter) and vanilla in a medium bowl. Stir in zucchini and crushed nuts if adding. Add the wet ingredients to the flour mixture and stir until just combined.
