Potato and onion bhajis have got to be my all time favourite Indian snack food. I always order them as a starter whenever I visit my favourite Indian restaurant.
Wash and boil potatoes. Cut onion into 1-inch pieces. Wash and chop cilantro. Remove the skin of the potatoes
and mash them.
Heat the oil in a skillet and add red chili, mustard seeds, and cumin seeds. Add asafetida when the mustard seeds
start popping. Add onion, turmeric powder, and sauté for 4 minutes. Add the mashed potatoes and salt and mix
well for 2 minutes.
Garnish with cilantro and serve with dosa, chapati, or pancake.
