
Healthy Zucchini Muffins

Step 1
Preheat oven to 350 degrees F.
Step 2
Whisk einkorn flour, cinnamon, baking soda and salt in a large bowl. Whisk eggs, jaggery, ghee (or butter) and vanilla in a medium bowl. Stir in zucchini and crushed nuts if adding. Add the wet ingredients to the flour mixture and stir until just combined.
Step 3
Transfer the batter to the prepared muffin tin. Bake until a toothpick inserted into the center of a muffin comes out clean, about 10 minutes. Let cool in the pan for 5 minutes, then turn out onto a rack to cool completely.
